Mussel Sprout Pancake (Hoy Tod)
Ingredients:
3/4 cup water
1/2 cup tapioca flour
1/4 cup all purpose flour
1/4 cup vegetable oil
5-7 springs cilantro (Pak Chee)
2 cup bean sprouts (Tuwa Gnog)
1 teaspoon baking powder
1 egg (optional)
salt and pepper
- Dump the mussels in boiling water until the shell open
- Cut cilantro into small pieces
- Mix the flours, water, baking powder, and little salt, and fry the mixture of batter on the hot flat-bottom pan to make it a very thin crispy pancake, then sprinkle mussels on the top. During frying, add oil if it is needed.
- Push the batter aside, add egg to mix together with the pancake and bean sprouts.
